In this book, researchers, subject matter experts and key stakeholders from government, the food industry, retail/food service groups and consumer groups 1) discuss current status and issues associated with management of food allergens, and 2) summarize research findings and showcase the best practices in managing allergen risks at various stages of the food chain, including during food manufacture/processing, during food preparation in food service and retail food establishments, in the home, and at the point of consumption.
